William Gleave, one of London’s most gifted young cooks and one of the first visiting chefs at P Franco, is at the helm. He is joined by everybody’s good friend Phil Bracey, the brainchild behind P Franco’s success. The food is best described as “thoughtful, nourishing food and a commitment to championing Britain’s many artisan producers”. The menu is guided by the seasons and produce is thoughtfully sourced, mainly from local producers. Rich ingredients enable a contemporary mix of Italian and European with a touch of umami. As expected, the wine list is pretty amazing too. A showcase of natural, low-intervention styles from small-scale producers across Europe and the New World are available for our taste buds. Two words: Passion and focus! This is simple yet sophisticated cooking at its best. The menu doesn’t come across as veggie-friendly and for that we need to knock down a point but for its understanding of plant-based great cooking and commitment to cuisine authenticity Bright deserves a 4 out of 5. We say go for Bright’s sustainability ethos and considerate approach to how we should all be dining.
