The cuisine is very light and they use a lot of vegetables and less prime cuts of meat such as offal. The trained staff explain the dietary requirements and allergens on each dish. Our favourite dish was New Potatoes, with a creamy gorgonzola sauce and a hot-and-sour chimichurri.
They separate their food waste to be collected with the first mile, who using an anaerobic digester, turn it into biogas to power the national grid. Big applause!
