Garam Masala is a very popular Indian spice blend, that varies greatly across India, from region to region, household and personal taste. This warming and comforting spice is used in many dishes found on the menus of Indian restaurants in London with each chef adding his or her own blend.  If you are a fan of Ayurvedic medicine, the word garam means “heat the body” and thought to elevate body’s temperature so that it can remove toxins better.

Ingredients

(makes enough for a curry dish for 2, or roughly 2 tablespoons)

  • 2 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • 2 tsp ground cardamom
  • 2 tsp ground turmeric
  • 1 tsp ground cinnamon (or half a cinnamon stick)
  • 1 tsp peppercorns
  • 1 tsp whole cloves

  • Dry roast the whole spices in a small skillet until they have turned a shade darker and you can smell them, around 3-4 minutes. This step is very important as it really enhances the flavours.
