Seasonal Green Fritters Recipe from Lauren Lovatt

This recipe comes from chef and food entrepreneur Lauren Lovatt. Lauren is one of the co-founders Plant Hub, a plant-based cookery school and event space in Hackney and Feed Your Mind Candy, which focuses on inspiring better mental health through food. This recipe is for her seasonal green fritters and is one of her go-to dinner recipes. Lauren loves to serve these in the winter topped with massaged kale, avocado and roasted winter roots. But anything goes.

Ingredients:

Serves 2

  • 1 cup chickpea flour
  • 1 cup water
  • 1 cup of seasonal greens
  • 1 chilli
  • Salt and pepper (to taste)

Method:

  • Blend or whisk one cup of chickpea flour with one cup water until very smooth – no lumps. Leave in a glass bowl covered over night to ferment.
  • The next day, when ready to use, add a pinch of salt and any seasonal greens. In winter, roughly chopped fresh chard would be perfect.
  • Add one fresh chilli finely chopped (chilli powder is also good) and season with salt and black pepper.
  • Heat a non-stick pan and add a tiny bit of olive oil. Once the pan is hot add one ladle full of the mix, spread out evenly and cook for a 2-3 minutes on each side until golden brown.
