Food is Life. It’s hard to argue with that and the ethos of the Chef's Manifesto, a global collaboration between chefs from 13 countries committed to the challenge of improving the food system. These actions include wasting less, using ingredients respectfully and using more plant-based ingredients. The Manifesto is linked to the UN's Sustainable Development Goals, specifically the goal focused on ending world hunger by 2030. But why are chefs crucial to achieving this goal? Good question… Chefs, whether in cafes, restaurants, schools or workplaces play an important part in ‘bridging the gap between’ the farm and fork. They not only feed us, but also influence what food is grown and eaten, how we think about and talk about food. Chefs inspire us to cook and can also help inspire us to make changes in our kitchens and communities.
Addressing the challenges in our food system is hugely complex and everyone plays a part, and yes, that includes chefs, but it also includes you. Next time you are dining out, think about the food on your plate - the chefs, growers and producers who put it there. And, think about what you can do as a consumer to help chefs deliver the changes our food system so desperately needs.
